Over the weekend, I baked a large batch of Cinnamon Roll Sugar Cookies that I gift packed for my dear cousin who was visiting us.

Baking is therapeutic and I always look forward to heat up the oven. With Christmas season upon us, my oven is busier than usual. I find that the best time to bake is early morning when the house is calm. I love it when my son wakes up to the warm aroma of baking and asks me, “Amma, what are you baking for me?” 🙂

I adapted this holiday cookie recipe from Heat Oven to 350 while the orignal recipe is from The King Arthur Flour Cookie Companion cookbook. The texture of this cinnamon flavored eggless cookie recipe is similar to a butter cookie, neither too soft nor too crunchy. Simple and classic holiday cookie that can be served plain or drizzled with sugar glaze.

 Ingredients

  •   Butter 3/4 cup, softened (slightly cold)
  •   Powdered sugar 1/2 cup
  •   Salt 1/2 tsp
  •   Vanilla extract 1 tsp
  •   Plain flour 1 1/2 cups
  •   For filling:
  •   Sugar 1/4 cup, granulated
  •   Cinnamon powder 1 1/2 tsps
  •   For glaze:
  •   Powdered sugar 1/4 cup
  •   Milk 2 tsps

Method for making Cinnamon Roll Sugar Cookies

  1. Beat butter and powdered sugar along with salt and vanilla extract till smooth.

  2. Add the flour and mix to form a dough. Place a parchment or butter paper on your work surface. Place the dough on it and roll it into a 9X12" rectangle. Brush all over the surface with melted butter.

  3. In a small bowl, mix the granulated sugar and cinnamon powder and sprinkle this mixture all over the rolled out dough evenly. Starting at the long end, carefully roll it into a log and wrap firmly with the butter paper and place in fridge for at least 2 hours.

  4. After two hours, remove the log from the fridge and cut into 1/2" slices. Place on a parchment paper or aluminum foil lined baking sheet. Bake in a pre heated oven at 175 C for 12 to 15 mts.

  5. When the underside of the cookie turns golden, remove from oven and place on cooling rack to cool. Drizzle glaze all over the cookies.

Tips

  •   If you feel that the dough is crumbly, add a few tbsps of milk.
  •   Once you remove the rolled up dough from the fridge, let it sit for 2-3 minutes and then slice. If you wait too long, the dough might begin to crumble.
  •   For sugar glaze, mix one to two teaspoons of milk with 1/4 cup of powdered sugar. Mix well and drizzle over the warm cookies.
